#OnkenTips -A lovely book full of recipes using Onken

My family and I love yoghurt in any form or shape be it dolloped over a bowl of fruit, swirled in a bowl of soup, stirred into curries to give a rich creamy texture or added in baking to give a soft spongy texture.

Coconut and yoghurt chutney- Delicious fresh coconut and tangy yoghurt tempered with chillies and curry leaves the perfect chutney for South Indian Dishes.


Tzatziki- Delicious Greek yoghurt and cucumber dip flavoured with garlic and paprika.



Yoghurt is so healthy and  rich for your body, not only does it have healthy bacteria that is good for your gut but it can provide nutrients such as Calcium, Vitamins and Magnesium and Potassium. One of my regular brands of yoghurt that I always have in my fridge is Onken Yogurts They come in a natural and a variety of fruit flavours so there is always something for everyone.


Onken together with some food bloggers have created a lovely mini recipe book called #Onken Tips Dips, dollops and swirls of Inspiration .The book is full of ideas on how you can use Onken yoghurts in your daily life. There are recipes  for  breakfast, savory dishes and sweet. You can check out the book on instagram to get some inspiration to create your own recipes using Onken Yoghurt.

Chocolate Chip Pancakes with Strawberry Sauce

In April I had the opportunity to collaborate with Onken yoghurts to create a simple and quick recipe video using Onken natural Yoghurts. I made simple chocolate chip pancakes with strawberry sauce that are not only easy to make but they are low fat and taste absolutely delicious. This is my first video experience and I had a very exciting time filming it. I am sharing the recipe below with the video as it would be the perfect Father's day treat to make for Father's day this Sunday.

 Chocolate Chip Pancakes with Strawberry Sauce Video

Chocolate Chip Pancakes with Strawberry Sauce
Light fluffy chocolate chip pancakes with a lovely summery strawberry sauce.
Ingredients:
  • 180g Plain Flour
  • 60g Sugar
  • 1 teaspoon Baking Powder
  • 1 handful Chocolate chips
  • 240 ml Natural Onken Yoghurt
  • 160ml Skimmed Milk
  • 1 medium egg
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla essence
  • Sunflower oil spray
  • 400g Fresh Strawberries
  • 2 tablespoons Sugar
  • 1 tablespoon Lemon Juice
Method:

1.Sieve the flour and baking powder in a bowl and stir in the sugar.2.In a jug add the egg, vanilla essence, yogurt, milk and butter and whisk together.3. Fold the wet ingredients into the dry ingredients to form a dropping consistency batter. 4.Reserve a few chocolate chips for garnish and stir in the remaining  chocolate chips into the batter.5. Spray a pan with oil and heat it on medium heat, next spoon some pancake batter into the pan to form a 3 inch pancake. Wait for small bubbles to form. 6.When the batter starts to set, flip the pancake and cook under side.7.Repeat for the remaining batter, spraying the pan with oil in between pancakes as required8.To serve, stack the pancakes and spoon over the strawberry sauce and sprinkle some more chocolate chips.9.Dust with icing sugar and serve with a dollop of Onken yoghurt and remaining strawberries
Strawberry Sauce
1.Reserve 6 strawberries for garnish and hull the remaining strawberries and chop them into small pieces.2.Add the sugar, strawberries and lemon juice to a pan and simmer for 10 minutes until the liquid thickens. Remove from heat and cool.3.For a smooth sauce, blend the sauce, or alternatively you can use it as it is with chunks.

Onken ~ Another Masterclass with Lisa Faulkner

I recently attended another master class by Lisa Faulkner for Onken at  the Terrace Suite at the Ham Yard Hotel. The theme for the master class was "Treat your self". Lisa showed us some wonderful desserts made with Onken Fruits and then we all had a go at creating our own desserts.

First on the agenda was the crème brulee,  It was exquisite and so easy to make. Using the Onken Mango, Papaya and passion fruit yoghurt and fresh mangoes , the crème brulee was definitely very tropical and luxurious.

Next we made yoghurt smoothies, the healthy berry smoothie was packed with blueberries and chia seeds and all combined with fat free yoghurt. It was the perfect smoothie for breakfast. The Tropical summer smoothie  made with the Mango, Papaya and passion fruit yoghurt and fresh mangoes and milk was rich and creamy and definitely my favourite of the two.


The highlight of the session was the Eton Mess, a layered dessert made with delicious strawberry yoghurt, strawberry coulis, meringue and fresh blueberries and strawberries all garnished with hazelnuts. A majestic dessert that was truly delectable.


The evening ended with some refreshing and cool  Mango, Papaya and passion fruit Ice lollies and Strawberry and coconut Ice lollies.


I had a wonderful time at the Master Class and came home with lots of Ideas and Inspiration to create desserts with the Onken Fruit range.I would like to Thank Onken for Inviting me and for the lovely goody bag they gave me.

Speedy strawberry trifle with Onken yoghurt


June brings Wimbledon, and Wimbledon is not complete without strawberries and cream, cucumber sandwiches and Pimms. In celebration of Wimbledon, I was really pleased when Onken sent me a pre wimbledon gift .My gift was an Onken cool bag, two bright pink tennis balls, a slice of turf, a mini bottle of prosecco, a bar of Greens and Black chocolate, a voucher for #my Onken Strawberry & Chocolate Flakes' yoghurt and my own personalised silver plated spoon so that I could enjoy the Onken yogurt straight out of the pot.


Onken have just launched a new Strawberry & Chocolate Flakes’ yogurt  that was created after it was voted by readers on their facebook page .The #my Onken Strawberry & Chocolate Flakes is the perfect treat for summer, served with strawberries, drizzled over cake, made into smoothies or just eaten straight out of the pot. I am sure there are many more ways to eat Onken yogurt , one easy way is to make a speedy strawberry trifle whilst watching a match or two.

Speedy strawberry and chocolate flakes trifle with fresh strawberries.

Ingredients:

4 mini cake bites
1 tablespoon strawberry jam
1 tablespoon milk chocolate grated
4 strawberries sliced thinly
100 ml Strawberry & Chocolate Flakes’ yogurt

Method:

1. Take two champagne flutes and add one mini cake bite in each one.
2. Place the strawberry jam in a bowl and warm it up in the microwave for 30 seconds.
3.Spoon a little melted strawberry jam over the cake bite and add a couple of slices of strawberries on top.
4. Spoon a tablespoon of Strawberry & Chocolate Flakes’ yogurt  on top of the strawberries and sprinkle some grated chocolate on top.
5. Repeat the procedure again by adding the second cake bite, followed by the jam, more strawberries, another tablespoon or two  of yogurt and finally a good sprinkle of chocolate flakes.
Finally garnish with a slice of strawberry .
Place in the fridge for 10 minutes and serve chilled.

Onken yoghurt "Dollop of difference" master class at L'atelier de chefs.


I was recently invited to the Onken yoghurt  "Dollop of difference"  master class presented by Lisa Faulkner and Nutritionist Angela Dowden at the L'atelier de chefs in London. The evening was themed around cooking with Onken Natural yoghurt. After a brief introduction we were taken into the well equipped  L'atelier de chefs kitchens to have a hands on cookery class with Lisa.
We started off with making some amazing banana muffins. Healthy delicious and super moist the muffins were easy to make and assemble and perfect for breakfast or snack on the go.



Next we made an amazing caramelised onion and yoghurt dip using the creamy Onken yoghurt. The dip was perfect served with crudités, crackers and warm pitta bread.The recipe was simple yet very delicious.
Lastly Lisa demonstrated how to make  a wonderful and fragrant marinade  She explained the importance of roasting the spices before grinding them in a pestle and mortar to release their flavours and then adding them to Onken yoghurt to make a delicious marinade for chicken, paneer or vegetables.



The master class was very enjoyable and relaxed with lots of interactions between the students and staff. The team at L'atelier de chefs were super and they miraculously had our workstations tidied and replenished after each recipe we created. 

The evening ended mingling with everyone and tasting all the food we had prepared accompanied with endless glasses of bubbly. We were also presented with lovely goody bags to take home so that we could all recreate the recipes. In my goody bag was a muffin tray, spices, yoghurt, skewers and a dipping bowl and recipe leaflets. It was a very enjoyable evening.
