Ingredients:
8 oz Okra
1 red Onion 2 medium potatoes
1 teaspoon salt
1/2 teaspoon
1/2 teaspoon turmeric
1/2 teaspoon szechaun pepper powder
2 tablespoons mustard oil ( I used sunflower)
1 clove garlic finely chopped
3 green chillies finely chopped
Method:
1. Wash the Okra and dry throughly.
2. Cut the Okra into thin strips.
3. Wash and peel the potatoes and cut into strips.
4. Peel the onion and cut into slices
5. Heat oil in a pan when it is hot add the garlic and onions and saute for 1-2 minutes, Add the okra nad potatoes and saute for 2-3 minutes longer.
6. Add the salt, turmeric, green chillies, pepper and mix well.
7. Cover and cook on low heat until potatoes are cooked.(Approx 10 minutes)
8. Transfer to a serving dish and garnish with fresh chopped coriander
Serve with Chappatis or bread of choice.

NB -It is recommended that this dish is cooked in mustard oil to get the authentic flavour of the dish.

interesting. mustard oil i havent used as i think the smell is bit too strong. but okra and potato this way tastes yummy
What a clever idea to use szechaun pepper powder with okra and potato. I love Nepali food for the way they so easily mix Indian and Chinese cooking traditions!
